In order to dispose of the ice during the warmer months, the snow was kept in hypogeal constructions suitable to preserve the temperature close to zero.

The compressed snow was stored in the form of ice until the following winter. In terms of size and production, the Neviera one known as Petra Nevara, located about 3km from Martina on the road to Locorotondo, was the biggest in Valle d’Itria. Built in the seventeenth century, it was an important ice factory owned by the Duke of Martina Franca, who held its monopoly.
